Parmesan Topped Roasted Eggplant Wheels

I love eggplant. One of the easiest ways to enjoy eggplant, is roasted. Simply cut the eggplant across making 1/2" wheels. Brush with olive oil. Sprinkle thyme, salt, pepper.

In a separate bowls combine 1/2 cup of breadcrumbs 1 tablespoons of olive oil and 1/2 cup of crated parmesan cheese. top each wheel with mixture and bake for 40 minutes in a 350ยบ oven.  Enjoy!
